About 50 minutes by car from Sapporo, in a quiet residential neighborhood of Chitose, you’ll find Porin—a charming bakery that creates sweets without eggs, dairy, or wheat. Known for its custom-made cakes that cater to up to 28 different allergens, Porin also offers delicious muffins, rice flour bread, and beautifully decorated celebration cakes. We sat down with owner Ms. Kudo to learn more about what makes Porin’s allergy-friendly treats so special.

Where to Find Porin: Location and Surroundings

Porin is located in Osatsu, a quiet neighborhood of Chitose City—about a 50-minute drive from Sapporo. Chitose is best known as the home of New Chitose Airport, the main gateway to Hokkaido by air.

If you’re coming from New Chitose Airport, take the rapid JR train to Osatsu Station (about 10 minutes), then walk roughly 9 minutes to the shop. From Sapporo, hop on a rapid train bound for the airport and get off at Osatsu after about 40 minutes—then it’s another 9-minute walk.

Thanks to its convenient location between Sapporo and the airport, Porin is easily accessible for both local residents and travelers passing through.

What Is Porin? A Bakery Without Eggs, Dairy, or Wheat

Look for the cream-yellow walls and vintage brick-style entrance.

You’ll recognize Porin by its soft cream-yellow exterior and charming brick-style entrance. The bakery opened in 2016, and as of 2025, it’s been delighting customers for nine years.

Originally a small café, the space was lovingly transformed into the current shop by owner Ms. Kudo, who spent about a year renovating it herself. The result is a cozy, stylish space filled with soft colors, playful wallpaper, and handcrafted wooden counters and shelves—like something out of a European bakery. And yet, it still feels heartwarmingly down-to-earth.

The adorable name Porin comes from Ms. Kudo’s own nickname. As the name suggests, the bakery specializes in sweets made without eggs, dairy, or wheat. Some custom cakes even go further—excluding up to 28 specific allergens.

Porin’s concept is simple but powerful: creating sweets that are kind to both the body and the heart. Everything is made without white sugar, preservatives, or artificial food coloring.

Before opening Porin, Ms. Kudo worked as a traditional Japanese chef. When asked what inspired her to start an allergy-friendly bakery, she shared:

What made you decide to start an allergy store?

I saw people unable to enjoy a cake on their special day just because of allergies. I wanted to create something they could safely enjoy.

At first, the bakery focused mainly on egg- and dairy-free items. But after realizing that wheat could cross-contaminate other products, Ms. Kudo made the bold decision to make everything in the shop free from eggs, dairy, and wheat.

One of Porin’s standout features is its line of custom celebration cakes—so vibrant and beautiful, you might never guess they’re allergen-free.

These cakes can be made free from up to 28 allergens, and each one is carefully tailored to the recipient’s preferences.

They look so good—even people without allergies would want to try them! How do you make them so colorful without food coloring?

For color, I use natural pastes—beets for red, pumpkin for yellow, and so on. I simmer them down depending on the need. These veggies also help create soft textures and add flavor.

Everything at Porin is handmade—starting with processing the vegetables used for color and texture. Avoiding artificial additives completely, Ms. Kudo’s muffins, breads, and cakes are fluffy, rich, and full of care.

That must take so much time and effort… Some of your muffins have unique flavors like ‘potato and chocolate ganache’—where do these ideas come from?

I just keep asking myself, ‘How can I make it taste better?’ and go through lots of testing and tasting. I want people to feel like these are regular cakes—just as delicious.

Porin is run entirely by Ms. Kudo herself, and is usually open from Thursday to Sunday. Even on her days off, she’s often in the shop preparing custom orders or restocking.

Every treat is crafted with deep thoughtfulness and dedication. As I watched the freshly baked muffins and breads being placed on the counter, I could imagine the smiles of those who would soon enjoy them.

As of April 2025: The refrigerated showcase displays delicate fresh cakes, while the counter is filled with just-baked muffins, rice-flour breads, and cookies.

When I visited in April 2025, a fresh batch had just come out of the oven: two types of muffins and seven kinds of rice-flour bread!

Of course, everything is completely free of eggs, dairy, and wheat. Even the chocolate is crafted using cacao mass and soy milk—no dairy at all. It’s amazing how the flavor is recreated so perfectly.

We Tried Porin’s Allergy-Friendly Treats – Here’s What We Thought

I reheated the muffins and rice flour bread to enjoy them warm.

I took home two types of muffins, the tofu chocolate mousse, four kinds of cookies, and several varieties of rice flour bread.
Each item had a delightful element of surprise—a pleasant twist that exceeded expectations in flavor and texture.

It was my first time trying a muffin made with shungiku (edible spring chrysanthemum), and it had such a refreshing, spring-like flavor!
The taste reminded me of yomogi (mugwort) at first, but then I could really recognize the unique shungiku aroma. The bakery uses tender salad leaves, so the distinct bitterness of shungiku is subtle. Paired with chewy mochi and sweet adzuki bean paste, the flavor was absolutely balanced and addictive.

Even though mochi and adzuki are such familiar flavors for Japanese people, the addition of shungiku gave it a totally new twist—I couldn’t stop eating it!

The potato ganache muffin uses locally grown potatoes in the chocolate center. After reheating and slicing it, the ganache melted just like a molten chocolate cake! The muffin itself was light and fluffy, with a pleasant crunch from toasted coconut.

From the refrigerated sweets, I chose the tofu chocolate mousse. As you can see from the cross-section photo, there’s another layer of mousse hidden inside!
According to the shop’s website, the mousse includes black tea mousse, ganache, and chocolate cookies layered within the tofu chocolate mousse. The texture was so rich and creamy, I never would’ve guessed it was made from tofu.

Honestly, I might like this even better than dairy mousse—so light and satisfying! The mix of flavors and textures made it a really fulfilling dessert.

I also picked up several animal-shaped cookies.
Each cookie is crafted with different doughs, so not only are they adorable to look at, but they also offer a variety of flavors.

These cookies are also used as decorations on the custom-order whole cakes. Imagine one of these cute characters sitting atop a birthday cake—it would melt anyone’s heart, no matter their age!

And for the bread lovers—freshly baked rice flour bread is a treat not to be missed.

The bread is made with grated nagaimo (Japanese yam), which helps give it a fluffy texture.
I enjoyed some right away, and froze the rest for later. After reheating, the bread still retained its soft and airy feel—so satisfying!
